Vegan Chocolate Cupcakes with Mocha Frosting. Yummy!

Just made some nut wedges with a recipe from the peta homepage!
For the dough you need: 225g flour, 75g starch, 1tsp. baking powder, 125g sugar (I used brown AND white sugar), 2 packets vanilla sugar, 2 egg replacements (I used a half-full small cup soy yogurt), 125g margarine
For the coating you need: 100g strawberry jam, 200g margarine, 200g sugar (I used brown and white sugar again), 2 packets vanilla sugar, 6 tbsp. water, 400g ground hazelnuts, chocolate coating or cooking chocolate
What to do: Mix all the ingredients for the dough and knead them together. Roll out the dough on a baking sheet (Also use baking paper) and spread the jam on it. Now melt the sugar and the margarine and add the water and the hazelnuts. Spread the mixture on the dough. Bake everything at 175°C for 45 minutes. After baking leave it to cool and then cut it. Finally you coat your nut wedges with chocolate coating or cooking chocolate.
China-noodles with broccoli and tofu.
How to make it: Stir-fry the whole-grain pasta in a pan with olive oil. In another pan you roast the broccoli and the tofu gently (also with olive oil) and season it with salt and black pepper. Then you season the noodles with china-spice. At last you mix everything together and fry it for two more minutes.

Anything better than veggies and tofu? I don’t think so! :)
Very easy AND very tasty:Fry minced tofu in a pan. Add courgette slices and tomato eighths. Cook everything in the pan. In another pan you fry potato slices until they are browned! Finished. (I added also some shashlik sauce.)

I am on skiing holiday and I’ve found soya ice cream in an ice cream shop here! I love it…

I don’t understand that…

Everybody in Germany gets worked up over the horsemeat scandal.
People eat tons of beef and pork everyday and they do not care when these animals are killed. But it is not o.k. when there is horsemeat in their food? Why do they eat meat at all? I don’t get it…
It’s a pity that they think it is right to decide which animal should be eaten and which not! That’s even more scandalous. They should not eat animals at all…

Saturday evening of a vegan!
First I had a pizza with some vegetables and mushrooms and tomato sauce.
And then chocolate fondue with dark chocolate, pineapple, apples, bananas and grapes!
So tasty!!!
Vegan apple huckleberry pancake
ingredients: 200g flour, 200ml soya milk, 70ml soda and 30g sugar
what to do: scramble the flour, milk, soda and sugar with a mixer until you can see little blebs in the dough; heat up a pan and add some oil; put some dough in the hot pan and add apples and/or huckleberrys; bake the pancake until it is gold-brown

Enjoy it!
With spinach filled puff pastry for lunch!
I have bought a prefabricated puff pastry and cut it into squares (10x10cm). Next I put some defrosted spinach with a tablespoon on the squares and folded down the nooks. At 200°C I have crisped up the filled puff pastry for 12 minutes… :)

After 2 1/2 months of being vegan I lost 6 kilograms. And at last I had many dreams in which I mind the ingredients of food and I don’t eat everything! Now I know:

I AM A VEGAN!
